Ginger Chicken Udon Noodles

Ingredients:

  • 8 oz udon noodles

  • 2 boneless, skinless chicken breasts, sliced into thin strips

  • 1 tablespoon vegetable oil

  • 2 garlic cloves, minced

  • 1 tablespoon grated ginger

  • 2 tablespoons soy sauce

  • 2 tablespoons hoisin sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1 red bell pepper, sliced

  • 1 cup snow peas

  • 2 green onions, sliced

  • 1 tablespoon sesame seeds, toasted (optional)

Instructions:

  1. Cook udon noodles according to package directions, then drain and set aside.

  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

  3. Add garlic and ginger to the pan and sauté for 1-2 minutes, until fragrant.

  4. In a small mixing bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil.

  5. Add the red bell pepper and snow peas to the pan and stir-fry for 3-4 minutes, until the vegetables are slightly softened but still crispy.

  6. Add the chicken back to the pan, along with the cooked udon noodles and the sauce. Stir-fry for an additional 1-2 minutes, until everything is heated through and evenly coated with the sauce.

  7. Serve hot, garnished with sliced green onions and toasted sesame seeds if desired.
