Cucumber Tomato Salad

 

Ingredients:

  • 2 cucumbers, peeled and sliced

  • 2 large tomatoes, chopped

  • 1 small red onion, thinly sliced

  • 1/4 cup chopped fresh parsley

  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon honey

  • Salt and pepper, to taste

Instructions:

  1. In a large bowl, combine the sliced cucumbers, chopped tomatoes, sliced red onion, and chopped parsley.

  2. In a separate bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper until well combined.

  3. Pour the dressing over the cucumber tomato mixture and toss to combine.

  4. Refrigerate for at least 30 minutes to allow the flavors to meld together.

  5. Serve chilled and enjoy your delicious and healthy Cucumber Tomato Salad!

Note: You can customize this recipe by adding other ingredients such as feta cheese, olives, or avocado.
